Ingredients

- 3–4 hard-boiled eggs
- ½ cup canola oil
- ¼ cup all-purpose flour
- 1 cup white onion, chopped
- 1 can (15 oz) tomato sauce
- 1 can (3 oz) tomato paste
- Salt and pepper, to taste
How to Cook Morcon
- Lay the beef slices on a flat surface. If slightly thick, gently pound until thinner to make rolling easier.
- Arrange sausage, eggs, and pickles lengthwise over the beef.
- Roll the meat tightly and secure with kitchen twine.
- Heat oil in an oven-safe casserole or cast-iron pan. Brown the beef rolls on all sides, then set aside.
- In the same pan, sauté onions until soft and fragrant.
- Add tomato sauce and tomato paste. Season with salt and pepper.
- Return the beef rolls to the pan, making sure they’re coated in sauce.
- Cover and bake in a preheated 350°F oven for 45 minutes, or until the beef is tender.
- Slice and serve with sauce on top.

Morcon is best served sliced and generously spooned with its sauce. It pairs well with other Filipino handaan dishes like Pork Menudo or crispy favorites such as Lechon Kawali.
